Ingredients

  • 1 eggplant, diced

  • 2 zucchinis, sliced

  • 1 red bell pepper, diced

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 can diced tomatoes

  • 2 tbsp olive oil

  • Salt and pepper to taste

Directions

  • In a large pot, heat olive oil and sauté onions and garlic until fragrant.
