Recently, I had the delightful experience of picking fresh beets from my aunt’s garden. If you don’t have a garden to raid, don’t worry! Beets are abundant in the autumn, making it the perfect time to visit your local farmer’s market to grab some fresh ones. Roast them up and craft the delicious roasted beet salad recipe below. Not only will you savor a delightful meal, but you’ll also be nourishing your body with wholesome foods that enhance both your inner and outer beauty.

Roasted Beet Salad with Goat Cheese & Balsamic Olive Oil

Ingredients

  • 4 medium-sized beets

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 4 ounces goat cheese, crumbled

  • 1/4 cup walnuts, toasted

  • 4 cups mixed greens (such as arugula, spinach, or spring mix)

  • 2 tablespoons balsamic vinegar

  • 2 tablespoons extra virgin olive oil

  • 1 teaspoon honey (optional)

  • Fresh basil leaves for garnish

Directions

  • Preheat your oven to 400°F (200°C).
  • Wash and trim the beets, then wrap each beet individually in aluminum foil.
  • Place the wrapped beets on a baking sheet and roast for about 45-60 minutes, or until they are tender when pierced with a fork.
  • Let the beets cool slightly, then peel and slice them into wedges.
  • In a small bowl, whisk together balsamic vinegar, extra virgin olive oil, honey (if using), salt, and pepper. Adjust seasoning to taste.
  • In a large salad bowl, combine the mixed greens and roasted beet wedges.
  • Drizzle the salad with the balsamic olive oil dressing, tossing gently to coat.
  • Top with crumbled goat cheese and toasted walnuts.
  • Garnish with fresh basil leaves for an extra burst of flavor.
  • Serve immediately and enjoy the vibrant flavors and colors!
