Ingredients

  • 4 large sweet potatoes, peeled and cubed

  • 1/4 cup unsalted butter

  • 1/4 cup brown sugar

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon cinnamon

  • 1 cup mini marshmallows

  • 1/2 cup chopped pecans

Directions

  • Preheat your oven to 350°F (175°C).
  • Boil sweet potatoes in a large pot until tender, about 20 minutes. Drain and mash.
  • Mix in butter, brown sugar, vanilla, and cinnamon until smooth.
  • Spread the mixture in a baking dish and top with marshmallows and pecans.
  • Bake for 25-30 minutes until marshmallows are golden brown.
