Ingredients

  • 1 pie crust

  • 1 tablespoon olive oil

  • 1 cup mushrooms, sliced

  • 2 cups spinach

  • 4 eggs

  • 1 cup milk

  • 1 cup shredded cheese (cheddar or Swiss)

  • Salt and pepper to taste

Directions

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a pan and sauté mushrooms until soft. Add spinach and cook until wilted.
  • In a bowl, whisk eggs, milk, salt, and pepper. Stir in cheese, mushrooms, and spinach.
  • Pour mixture into pie crust and bake for 35-40 minutes until set.
