Ingredients
8 large eggs
1/4 cup milk (dairy or non-dairy)
Salt and pepper, to taste
2 tablespoons olive oil or butter
1/2 cup diced onion
1 handful spinach, chopped
1 handful mustard greens, chopped
1 tomatoes, sliced
1 jalapeño peppers, sliced
1 cup shredded cheese (optional)
Directions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- In an oven-safe skillet, heat the olive oil or butter over medium heat. Add the diced onion and sauté until softened, about 3 minutes. Add the sliced jalapeños, spinach, and mustard greens, and sautee about 2-3 minutes until the vegetables are a bit tender. Let cool.
